Quinoa Burrito Bowl (Bye Chipotle)

If I haven’t already convinced you that you love quinoa, this burrito bowl will definitely do it. I promise you’ll kiss Chipotle goodbye after trying this Chicken Quinoa Burrito Bowl. Because the recipe was “sponsored”, I made a couple adjustments.

  • I marinate my meat in Mexican chilli power, fresh lime juice, dried oregano, cumin (1tsp of each) & dash of salt, black pepper
  • I make my own simple guacamole
  • I added fat free sour cream cause it goes with the bowl

I cooked the chicken breast on my George Foreman grill cause it’s quick and good.

After letting your meat rest, just pile on the ingredients. Use lots of the corn salsa cause it’s yummy. I plan to try this dish with black beans instead of chicken. I also want to try it with shrimp, but I’m sure it would taste great with any (well seasoned) lean protein. Enjoy!
