Sunday comes so quickly. Despite not being in a #mealprep mood today, I am determined to mix up my healthy, lunch options each week. This week I am trying Sweet Potato Peanut Bisque. I was definitely skeptical about the flavor profile when skimming the ingredient list, but I haven’t had hot lunch in a while so I thought I’d go for it. And I’m happy I did. This bisque is so hearty and good. It was also very easy to make. Since it was my first time making this recipe, I followed it without any modifications. However, when I make it again, I will blend both sweet potatoes and use hot peppers instead of mild. For now, I am adding a sprinkle of cayenne pepper to each batch.
Of course, my mason jar obsession works perfectly to package the bisque for the week. If you are looking for a lunch that is simple to make, with layers of flavor that will cause party in your mouth, you’ll definitely enjoy this bisque bliss!
