It’s Sunday which means it’s meal prep day. For lunch this week, I’m trying something new and I think I’ll be adding this Cold Greek Quinoa Salad from Back to Her Roots to my lunchtime favorites. Besides, you can count chopping veggies as part of the weekend workout.
I do try my best to eat healthy Monday through Friday, but I really only discovered veggies as an adult. I still don’t like olives so I left those out. I also don’t like cucumbers so I substituted zucchini for them because I think they have similar taste. The dressing was super simple to make and I plan to add this Greek dressing to my roster. I’m definitely looking forward to lunch this week.
