I love chilli and nachos. I also love meat. So I was very skeptical about making these Vegetarian Chilli Nachos from How to Feed a Loon. After combing the chilli recipe, I hesitated again because there were so many veggies to chop. Just count the chopping as part of your workout cause it’s definitely worth it. These are now my favorite nachos and this meatless chilli is all I’ll ever make. It’s amazing!
I used my favorite organic blue corn chips and topped them with my simple homemade guacamole and 2% Colby jack cheese.
