Every once in a while, but not often, I am wrong. In Dressing Over Stuffing I proclaimed to not like gravy, but that was before I found this Best Ever Pot Roast Recipe on Simply Stated. My NYE feast included a roast, my new favorite mac & cheese, yummy roasted Brussels sprouts, and apple cobbler. I follow The Pioneer Woman’s approach for a perfect pot roast (except I add garlic to the veggies which turned out to be perfect for the gravy and use more wine than broth). Looks yummy, right? After the roast cooked, I blended 4 carrots, 2 onion halves, 2 garlic cloves and lots of pot juice to make the gravy. And, since I love mason jars, you know where I stored the finished product for left overs. Enjoy!
