In keeping with healthy resolutions as we lead up to the new year, I’m posting my favorite healthy recipes all week. I have been eating a balanced diet, working out, and maintaining a healthy weight since 2011 and one of my favorite blogs for great recipes is Skinny Taste. I already posted her Mexican Sweet Potato Casserole . My second favorite SkinnyTaste recipe is her Cajun Chicken Pasta on the Lighter Side.
I make this recipe with few adjustments. I don’t eat mushrooms so I omit those. And since it’s great with any lean protein, the dish is perfect with chicken or shrimp.
