Nope! I will not accept it. Pumpkin season is not over. Actually, when you’re cooking with organic, canned pumpkin, pumpkin season is year round. I am admittedly not a pumpkin fanatic. However, there is something about the aroma of pumpkin bread, muffins, or cookies filling my home in the fall. It’s way better than the best candle. Each year, I look for a new recipe to add to my favorites and this year I found a great one on Cookie+kate.
Yes, they are “healthy” but I promise they taste great. The recipe allows options, so I used:
- organic, canned pumpkin puree
- whole wheat flour (my favorite is King Arthur)
- 1/2 tsp cinnamon + 4 raw sugar packets (5 muffin toppings)
After the smell of pumpkin spice fills your home, it will be hard to resist the urge to dig into these muffins right away, but take heed to the warning from Kate and give the muffins adequate time to cool and rest.
