Mexican Sweet Potatoes: Just Trust Me

I admit the first time I tried this recipe of sweet potatoes, hot peppers, chicken, and cheese I was definitely skeptical. But trust me, your taste buds will love the combination of these ingredients in a yummy casserole. If you have a fancy spiralizer, use it. I don’t and part of the “skinny” in this SkinnyTaste recipe is the work out I get from using my cheap, hand spiraler to prepare the sweet potatoes for the dish. I like the spiral trend, but once this dish is cooked, I am not sure it matters much whether you spiral or cube the potatoes.

This is one of the recipes I follow with few deviations-I do sometimes cube the potatoes and I always use fresh chicken (boiled and shredded). Warning: it is super spicy. I love spicy. However, you can tone down the kick by serving with a dollop of sour cream.
